Cranberry-Orange Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (15-oz) can whole-berry cranberry sauce
  • ½ cup orange juice

Instructions

  1. Sprinkle chicken with salt and pepper. Place chicken in a lightly greased 5- to 7-quart slow cooker.
  2. Whisk together cranberry sauce and orange juice. Pour over chicken.
  3. Cover and cook on LOW 7 to 8 hours or until chicken is tender.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable long-grain and wild rice
  • 5 slices bacon, chopped
  • ⅔ cup mayonnaise
  • ¼ cup whole-grain mustard
  • 2 Tbsp honey
  • 2 (12-oz) pkg broccoli florets, coarsely chopped
  • 1 cup shredded Cheddar cheese

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels.
  3. Whisk together mayonnaise, mustard, and honey in a large bowl. Add broccoli, cheese, and bacon, stirring to combine.
