Cranberry-Orange Chicken
Broccoli Salad and Long Grain and Wild Rice
Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 1 (15-oz) can whole-berry cranberry sauce
- ½ cup orange juice
Instructions
- Sprinkle chicken with salt and pepper. Place chicken in a lightly greased 5- to 7-quart slow cooker.
- Whisk together cranberry sauce and orange juice. Pour over chicken.
- Cover and cook on LOW 7 to 8 hours or until chicken is tender.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable long-grain and wild rice
- 5 slices bacon, chopped
- ⅔ cup mayonnaise
- ¼ cup whole-grain mustard
- 2 Tbsp honey
- 2 (12-oz) pkg broccoli florets, coarsely chopped
- 1 cup shredded Cheddar cheese
Side Dish Instructions
- Prepare rice according to package directions.
- Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels.
- Whisk together mayonnaise, mustard, and honey in a large bowl. Add broccoli, cheese, and bacon, stirring to combine.
