Chicken Parmesan

Angel Hair Pasta and Garlic Spinach

Ingredients

  • 3 lb boneless, skinless chicken breasts
  • 1 (24-oz) jar marinara sauce
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 1 Tbsp Italian seasoning
  • 1½ cups shredded Parmesan cheese
  • 2 Tbsp butter
  • 1½ cups panko breadcrumbs
  • ½ tsp garlic powder

Instructions

  1. Place chicken in a 5- to 7-quart slow cooker.
  2. Stir together marinara, tomatoes, and Italian seasoning; pour over chicken.
  3. Cover and cook on LOW 6½ to 7½ hours or until chicken is tender.
  4. Sprinkle cheese over top of chicken; cover and cook on HIGH 30 minutes or until cheese melts. (Reserve 6 portions chicken with sauce for Chicken Parmesan Hoagies recipe.) Serve remaining chicken.
  5. Melt butter in a nonstick skillet over medium heat; add breadcrumbs and garlic powder, and cook 4 minutes or until golden brown, stirring often.
  6. Sprinkle breadcrumb mixture over chicken just before serving.

  • 8 oz angel hair pasta
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook garlic in hot oil in a large nonstick skillet over medium heat 1 minute, stirring constantly, or until fragrant.
  3. Add spinach to skillet, and cook, stirring often, 2 minutes or until spinach wilts.
