Chicken Parmesan
Angel Hair Pasta and Garlic SpinachIngredients
- 3 lb boneless, skinless chicken breasts
- 1 (24-oz) jar marinara sauce
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 1 Tbsp Italian seasoning
- 1½ cups shredded Parmesan cheese
- 2 Tbsp butter
- 1½ cups panko breadcrumbs
- ½ tsp garlic powder
Instructions
- Place chicken in a 5- to 7-quart slow cooker.
- Stir together marinara, tomatoes, and Italian seasoning; pour over chicken.
- Cover and cook on LOW 6½ to 7½ hours or until chicken is tender.
- Sprinkle cheese over top of chicken; cover and cook on HIGH 30 minutes or until cheese melts. (Reserve 6 portions chicken with sauce for Chicken Parmesan Hoagies recipe.) Serve remaining chicken.
- Melt butter in a nonstick skillet over medium heat; add breadcrumbs and garlic powder, and cook 4 minutes or until golden brown, stirring often.
- Sprinkle breadcrumb mixture over chicken just before serving.
Side Dish Ingredients
- 8 oz angel hair pasta
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
Side Dish Instructions
- Cook pasta according to package directions.
- Meanwhile, cook garlic in hot oil in a large nonstick skillet over medium heat 1 minute, stirring constantly, or until fragrant.
- Add spinach to skillet, and cook, stirring often, 2 minutes or until spinach wilts.
