Greek-Style Turkey Breast

Bacon-Balsamic Green Beans and Garlic Mashed Potatoes

Ingredients

  • ½ cup water
  • 2 Tbsp salt-free Greek seasoning
  • 1 Tbsp olive oil
  • ½ tsp salt
  • 4 lb frozen bone-in turkey breast, thawed

Instructions

  1. Pour water into a 5- to 7-quart slow cooker.
  2. Combine seasoning and oil; rub over turkey. Place turkey in cooker.
  3. Cover and cook on LOW 8 hours or until a meat thermometer inserted into the thickest portion of breast registers at least 165°F.
  4. (Reserve 2 cups sliced turkey for Hot Brown Sandwiches recipe.) Serve remaining turkey.

Side Dish Ingredients

  • 3 slices bacon
  • 1½ lb green beans, trimmed
  • 2 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • ½ tsp pepper
  • 1 (24-oz) pkg refrigerated garlic mashed potatoes

Side Dish Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving 1 Tbsp drippings in skillet. Crumble bacon.
  2. Cook beans in hot drippings 5 minutes or until tender, stirring often.
  3. Add sugar, vinegar, and pepper, stirring until sugar dissolves; stir in crumbled bacon.
  4. Cook potatoes according to package directions.
