Fire-Roasted Tomato Soup

Grilled Pimiento Cheese Sandwiches

Ingredients

  • 2 (28-oz) cans crushed tomatoes
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 cup heavy cream
  • 1½ tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ⅛ tsp sugar
  • 1 (5-oz) pkg seasoned croutons

Instructions

  1. Process all ingredients, except croutons, in a blender until smooth or use an immersion blender in a saucepan.
  2. Pour soup mixture into a saucepan; cook over medium heat 15 minutes or until thoroughly heated. Top each serving with croutons.

Side Dish Ingredients

  • 2 (12-oz) cartons pimiento cheese
  • 12 slices sourdough bread 
  • 3 Tbsp butter, softened

Side Dish Instructions

  1. Spread desired amount of pimiento cheese on 6 slices of bread. Top with remaining slices of bread.
  2. Spread outside of sandwiches with softened butter.
  3. Cook sandwiches in a hot skillet over medium heat until golden brown on both sides. Cut sandwiches in half diagonally to serve.
