Ingredients
- 6 thin sliced boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 lb asparagus, ends trimmed
- 1 (10-oz) pkg shredded carrots
- ⅓ cup Italian dressing
- ¼ cup balsamic vinegar
- 2 Tbsp honey
- ¼ tsp crushed red pepper
- 1 pint grape tomatoes
- 1 cup crumbled feta cheese
Instructions
- Season chicken lightly with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 4 minutes per side or until done. Remove from skillet.
- Chop asparagus. Add asparagus and carrots to skillet; cook, stirring occasionally, 4 minutes or until crisp-tender. Remove from skillet.
- Add dressing, vinegar, honey, and red pepper to skillet; bring to a boil, reduce heat, and simmer 1 minute.
- Return chicken and vegetables to skillet; add tomatoes. Cook 2 minutes or until thoroughly heated. Sprinkle with cheese.
