Roasted Vegetable-Bacon Pizzas

Ingredients
- 1 (18-oz) pkg frozen vegetables for roasting (Brussels sprouts, butternut squash and onion)
- 1 (2-count) pkg 12-inch prebaked thin pizza crusts
- 2 Tbsp olive oil
- 1½ cups ricotta cheese
- 1 (2.7-oz) pkg fully cooked bacon, coarsely chopped or torn
- 2½ cups shredded mozzarella cheese
- 2 Tbsp balsamic glaze
Instructions
- Preheat oven to 450°F. Roast vegetables according to package directions. Cool slightly, and coarsely chop.
- Meanwhile, brush each crust with 1 Tbsp oil; bake according to package directions.
- Spread partially-baked crusts with ricotta cheese; sprinkle generously with salt and pepper. Top with roasted vegetables, bacon, and mozzarella. Bake 10 minutes until cheese is melted; drizzle with balsamic glaze.
