Mason Jar Southwestern Chicken Salad
Chipotle Ranch Dressing
Ingredients
- 1 avocado, quartered
- 2 Tbsp olive oil
- 1 tsp lime juice (or use lemon juice)
- 1 red bell pepper, thinly sliced
- 1½ cups shredded rotisserie chicken
- 1 (5-oz) pkg chopped romaine lettuce
- ½ cup shredded sharp Cheddar cheese
- ½ cup salted, roasted pepitas (pumpkin seeds)
Instructions
- Toss together avocado, oil, and lime juice.
- Pour Chipotle Ranch Dressing recipe into 4 widemouth quart-size Mason jars.
- Layer with bell pepper, avocado, chicken, lettuce, cheese, and pepitas. Seal jars. Chill until ready to serve.
- Before serving, shake jars well. Eat right from the jars, or pour salads into a bowl.
Side Dish Ingredients
- ¼ cup refrigerated yogurt Ranch dressing
- 1 chipotle pepper in adobo sauce, chopped
Side Dish Instructions
- Combine dressing and pepper; chill.
