Vegetable-Beef Soup

Crusty Garlic Bread

Ingredients

  • 1 lb ground beef (or use ground turkey)
  • 1 zucchini, cut into half-moons
  • ½ cup chopped onion
  • 3 cloves garlic, minced
  • 1 (12-oz) pkg frozen mixed vegetables
  • 2 (14.5-oz) cans diced tomatoes with Italian seasoning
  • 1 (32-oz) carton chicken broth
  • 1 (15-oz) can great Northern beans, drained and rinsed

Instructions

  1. Cook beef, zucchini, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly; drain and return to pot.
  2. Add mixed vegetables and remaining ingredients; bring to a boil, reduce heat, and simmer 10 minutes.

  • 1 (16-oz) pkg frozen garlic bread

Side Dish Instructions

  1. Bake bread according to package directions.
