One-Dish Dinner
Tex-Mex Fried "Rice" Bowls
Ingredients
- 1 (12-oz) pkg frozen cauliflower rice
- ½ lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1½ Tbsp olive oil
- ½ red bell pepper, chopped
- ½ tsp chili powder
- ¼ tsp salt
- ¼ tsp pepper
- ½ tomato, chopped
- 2 green onions, sliced
- ½ cup crumbled cotija cheese (or use feta cheese)
- ½ cup cubed avocado
Instructions
- Cook cauliflower according to package directions; cool slightly, and squeeze dry using paper towels.
- Meanwhile, cook chicken in hot oil in a skillet over medium-high heat 10 minutes or until done, stirring occasionally. Stir in bell pepper, chili powder, salt, and pepper; cook 2 to 3 minutes.
- Stir in cauliflower. Cook 5 minutes. Remove from heat. Stir in tomato and onions. Divide between 2 bowls; top with cheese and avocado.
