Tex-Mex Fried "Rice" Bowls

Ingredients

  • 1 (12-oz) pkg frozen cauliflower rice
  • ½ lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1½ Tbsp olive oil
  • ½ red bell pepper, chopped
  • ½ tsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tomato, chopped
  • 2 green onions, sliced
  • ½ cup crumbled cotija cheese (or use feta cheese)
  • ½ cup cubed avocado

Instructions

  1. Cook cauliflower according to package directions; cool slightly, and squeeze dry using paper towels.
  2. Meanwhile, cook chicken in hot oil in a skillet over medium-high heat 10 minutes or until done, stirring occasionally. Stir in bell pepper, chili powder, salt, and pepper; cook 2 to 3 minutes.
  3. Stir in cauliflower. Cook 5 minutes. Remove from heat. Stir in tomato and onions. Divide between 2 bowls; top with cheese and avocado.
