Sausage, Sweet Potato, and Brussels Sprouts Hash
Goat Cheese-Filled PearsIngredients
- ½ (13-oz) pkg natural smoked Polish sausage links, sliced
- 1 organic sweet potato, peeled and cubed
- ½ onion, chopped
- ½ lb Brussels sprouts, trimmed and halved
- ½ Tbsp olive oil
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp water
- 2 large eggs
- 2 Tbsp chopped fresh parsley
Instructions
- Cook sausage, potato, onion, and Brussels sprouts in hot oil in a large cast-iron skillet over medium heat 5 minutes or until sausage is browned.
- Add garlic, salt, and pepper. Sauté 2 minutes. Add water; cover and cook 10 minutes or until vegetables are tender.
- Make 2 wells in mixture; carefully break 1 egg into each well. Cover and cook 3 minutes or until egg yolks are cooked to desired doneness; sprinkle with parsley.
Side Dish Ingredients
- 2 organic pears, halved and cored
- ½ (4-oz) log goat cheese, crumbled
- 2 Tbsp chopped walnuts
- 1 Tbsp honey
Side Dish Instructions
- Place 2 pear halves on each of 2 plates; place cheese in center of pears. Sprinkle with nuts; drizzle with honey.
