Curried Pork Chops
Almond-Raisin "Couscous" and Sugar Snaps
Ingredients
- 3 (4-oz) boneless center-cut pork chops
- ¾ tsp curry powder
- ½ tsp ground cumin
- ¼ tsp salt
- 1½ tsp olive oil
Instructions
- Sprinkle pork with curry powder, cumin, salt, and pepper, if desired.
- Cook pork in hot oil in a large nonstick skillet over medium heat 4 minutes per side or until done.
Side Dish Ingredients
- 1 (16-oz) pkg cauliflower crumbles
- 1½ Tbsp olive oil
- ¼ tsp salt
- 1 clove garlic, minced
- ¼ cup sliced almonds
- ¼ cup golden raisins
- 1 Tbsp chopped fresh parsley
- 1 (8-oz) pkg sugar snap peas
Side Dish Instructions
- Preheat oven to 400°F. Combine cauliflower, oil, salt, and garlic in a roasting pan. Bake 25 minutes or until browned, stirring once.
- Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 6 minutes or until fragrant. Stir nuts, raisins, and parsley into cauliflower mixture before serving.
- Steam peas according to package directions .
