Cheesy Barbecue Chicken

Mashed Cauliflower and Buttered Green Beans

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ½ cup barbecue sauce
  • 1 cup shredded colby-Jack cheese
  • ½ (4.5-oz) pkg crumbled bacon

Instructions

  1. Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Lightly season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned.
  3. Transfer chicken to a parchment paper-lined rimmed baking sheet, and brush with barbecue sauce. Bake 10 minutes. Sprinkle each piece of chicken with cheese and bacon, and bake 3 minutes longer or until cheese is melted.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen mashed cauliflower
  • 1 (12-oz) pkg steam-in-bag green beans
  • 1½ Tbsp butter, melted

Side Dish Instructions

  1. Cook cauliflower according to package directions.
  2. Steam green beans in a steamer basket over simmering water 10 minutes or until crisp-tender. Drizzle with butter. Season cauliflower and green beans with salt, if desired.
