Ingredients

  • 1½ lb ground sirloin
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 2 cups baby spinach
  • 6 burrito-size flour tortillas
  • 1 Tbsp olive oil
  • 1½ cups shredded Mexican-blend cheese
  • 3 green onions, sliced

Instructions

  1. Preheat oven to 400°F. Sprinkle beef and onion with garlic powder. Cook in a large skillet over medium-high heat 6 to 8 minutes or until beef is done and onion is tender. Add spinach; cook 2 minutes or until wilted.
  2. Brush one side of tortillas with oil, and place, oiled sides down, on a large rimmed baking sheet.
  3. Divide beef mixture among tortillas, placing ingredients on one half of each tortilla. Top with cheese and onions. Fold tortillas in half.
  4. Bake 6 minutes, and flip. Bake 6 to 7 minutes longer or until tortillas are browned and cheese is melted. Cut into wedges.

  • 1 (16-oz) container pineapple chunks
  • 3 Tbsp brown sugar

Side Dish Instructions

  1. Sprinkle pineapple with brown sugar. Cook in a large skillet over medium-high heat 4 to 5 minutes per side or until charred.
