Herbed Bacon-Mushroom Mac and Cheese

Ingredients

  • 8 slices center cut bacon
  • 1 (16-oz) pkg sliced mushrooms
  • 2 tsp Italian seasoning
  • 2¾ cups milk
  • 1 cup water
  • 8 oz elbow macaroni
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups shredded white Cheddar cheese
  • 2 Tbsp chopped fresh thyme (optional)

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Add mushrooms to drippings in skillet; cook 6 minutes or until browned. Stir in Italian seasoning.
  3. Meanwhile, bring milk, water, pasta, salt, and pepper to a simmer in a saucepan over medium heat, stirring occasionally. Reduce heat to low, and cook, stirring often, 8 to 10 minutes or until pasta is done and sauce is creamy.
  4. Remove pan from heat. Add bacon, mushrooms, and cheese, stirring until cheese melts. Sprinkle with thyme, if desired.

  • 1 (10-oz) pkg spinach
  • 3 oranges, sectioned
  • ⅓ cup lemon vinaigrette

Side Dish Instructions

  1. Toss together spinach, oranges, and vinaigrette in a bowl.
