Herbed Bacon-Mushroom Mac and Cheese
Citrus Spinach Salad
Ingredients
- 8 slices center cut bacon
- 1 (16-oz) pkg sliced mushrooms
- 2 tsp Italian seasoning
- 2¾ cups milk
- 1 cup water
- 8 oz elbow macaroni
- ½ tsp salt
- ½ tsp pepper
- 1½ cups shredded white Cheddar cheese
- 2 Tbsp chopped fresh thyme (optional)
Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Add mushrooms to drippings in skillet; cook 6 minutes or until browned. Stir in Italian seasoning.
- Meanwhile, bring milk, water, pasta, salt, and pepper to a simmer in a saucepan over medium heat, stirring occasionally. Reduce heat to low, and cook, stirring often, 8 to 10 minutes or until pasta is done and sauce is creamy.
- Remove pan from heat. Add bacon, mushrooms, and cheese, stirring until cheese melts. Sprinkle with thyme, if desired.

- 1 (10-oz) pkg spinach
- 3 oranges, sectioned
- ⅓ cup lemon vinaigrette
Side Dish Instructions
- Toss together spinach, oranges, and vinaigrette in a bowl.
