Ingredients

  • 1½ (12-oz) pkg fully cooked Italian-style chicken meatballs
  • 2 Tbsp olive oil
  • 2 Tbsp all-purpose flour
  • 1 cup milk
  • 1 cup marinara sauce
  • 12 slider buns (preferably whole wheat)
  • ½ cup shredded mozzarella cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook meatballs according to package directions.
  2. Meanwhile, cook oil and flour over medium-high heat in a large skillet 2 minutes. Add milk and marinara sauce; cook, whisking constantly, 5 minutes or until thickened. Remove from heat. Toss in meatballs.
  3. Serve meatballs on slider buns with cheese and parsley.

Side Dish Ingredients

  • 2 lb carrots, cut into sticks
  • 1 Tbsp olive oil
  • 1½ Tbsp Italian seasoning
  • ¼ cup freshly grated Parmesan cheese
  • 1½ tsp dried crushed rosemary

Side Dish Instructions

  1. Preheat oven to 400°F. Toss carrots with oil and seasoning on a large rimmed lightly greased baking sheet; spread in a single layer.
  2. Bake 20 minutes or until browned and tender. Remove from oven; sprinkle with cheese and rosemary.
