Ham and Cheddar Biscuit Sandwiches

Ingredients

  • 4 frozen buttermilk biscuits
  • 1 Tbsp Dijon mustard
  • 1 Tbsp reduced-sugar apricot preserves
  • ½ lb deli sliced low-sodium ham
  • 4 (0.67-oz) slices reduced-fat Cheddar cheese

Instructions

  1. Bake biscuits according to package directions. Meanwhile, combine mustard and preserves.
  2. Slightly cool and halve biscuits lengthwise. Spread mustard mixture over cut sides of biscuits. Serve ham and cheese on biscuits.

Side Dish Ingredients

  • 4 cups chopped green leaf lettuce
  • 1 cup seedless red grapes, halved
  • ¼ cup chopped walnuts
  • ¼ cup light balsamic vinaigrette

Side Dish Instructions

  1.  Toss together all ingredients in a serving bowl.
