Apple-Cranberry Pork Chops

Ingredients

  • 1½ cups chopped sweet red apple
  • ⅓ cup dried cranberries
  • 3 Tbsp water
  • 2 tsp sugar
  • 1 tsp curry powder
  • ½ tsp vanilla extract
  • 1 Tbsp light butter with canola oil
  • 6 (4-oz) boneless center-cut pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp canola oil

Instructions

  1. Bring apples, cranberries, water, sugar, and curry powder to a boil in a small saucepan over medium-high heat.
  2. Reduce heat to medium-low; cover and cook 5 minutes or until apples are just tender, stirring occasionally.
  3. Remove from heat; stir in vanilla and butter. Cover and set aside.
  4. Sprinkle both sides of pork chops with salt and pepper.
  5. Cook pork in a large nonstick skillet over medium-high heat 4 minutes per side or until done.
  6. Top pork with apple mixture.

Side Dish Ingredients

  • ½ cup chopped pecans
  • 2½ cups water
  • ¾ cup bulgur
  • ⅛ tsp crushed red pepper
  • ¾ tsp salt, divided
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp light butter with canola oil

Side Dish Instructions

  1. Cook pecans in a saucepan over medium-high heat 2 minutes or until toasted, stirring frequently.
  2. Remove pecans from saucepan, and set aside.
  3. Add water, bulgur, and pepper to saucepan; bring to a boil.
  4. Reduce heat to medium-low; cover and cook 12 minutes or until bulgur is tender.
  5. Stir in pecans and ½ tsp salt.
  6. Meanwhile, steam broccoli according to package directions. Place in a large bowl; toss with light butter and ¼ tsp salt.
