Apple-Cranberry Pork Chops

Ingredients
- 1½ cups chopped sweet red apple
- ⅓ cup dried cranberries
- 3 Tbsp water
- 2 tsp sugar
- 1 tsp curry powder
- ½ tsp vanilla extract
- 1 Tbsp light butter with canola oil
- 6 (4-oz) boneless center-cut pork chops
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp canola oil
Instructions
- Bring apples, cranberries, water, sugar, and curry powder to a boil in a small saucepan over medium-high heat.
- Reduce heat to medium-low; cover and cook 5 minutes or until apples are just tender, stirring occasionally.
- Remove from heat; stir in vanilla and butter. Cover and set aside.
- Sprinkle both sides of pork chops with salt and pepper.
- Cook pork in a large nonstick skillet over medium-high heat 4 minutes per side or until done.
- Top pork with apple mixture.
Side Dish Ingredients
- ½ cup chopped pecans
- 2½ cups water
- ¾ cup bulgur
- ⅛ tsp crushed red pepper
- ¾ tsp salt, divided
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp light butter with canola oil
Side Dish Instructions
- Cook pecans in a saucepan over medium-high heat 2 minutes or until toasted, stirring frequently.
- Remove pecans from saucepan, and set aside.
- Add water, bulgur, and pepper to saucepan; bring to a boil.
- Reduce heat to medium-low; cover and cook 12 minutes or until bulgur is tender.
- Stir in pecans and ½ tsp salt.
- Meanwhile, steam broccoli according to package directions. Place in a large bowl; toss with light butter and ¼ tsp salt.
