Ham and Grits Casserole
Orange-Pomegranate Salad
Ingredients
- ½ cup quick-cooking grits
- 3 oz diced lean ham
- 3 egg whites
- Pinch cayenne pepper
- ½ cup shredded reduced-fat sharp Cheddar cheese, divided
Instructions
- Preheat oven to 350°F. Cook grits in a medium pot on stove according to package directions.
- Remove from heat and stir in ham, egg whites, cayenne pepper and ¼ cup cheese.
- Pour into a baking dish coated with cooking spray. Bake 25 to 30 minutes or until knife inserted comes out clean; sprinkle with remaining ¼ cup cheese.

- 2 oranges, peeled and sectioned
- ¼ cup pomegranate arils
Side Dish Instructions
- Combine oranges and pomegranate arils in a bowl; toss.
