Ham and Grits Casserole

Ingredients

  • ½ cup quick-cooking grits
  • 3 oz diced lean ham
  • 3 egg whites
  • Pinch cayenne pepper
  • ½ cup shredded reduced-fat sharp Cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F. Cook grits in a medium pot on stove according to package directions.
  2. Remove from heat and stir in ham, egg whites, cayenne pepper and ¼ cup cheese.
  3. Pour into a baking dish coated with cooking spray. Bake 25 to 30 minutes or until knife inserted comes out clean; sprinkle with remaining ¼ cup cheese.

  • 2 oranges, peeled and sectioned
  • ¼ cup pomegranate arils

Side Dish Instructions

  1. Combine oranges and pomegranate arils in a bowl; toss.
