Sweet & Smoky Barbecue Chicken Sandwiches

Ingredients

  • 1½ cups diced red onion
  • 1½ lb boneless skinless chicken breasts
  • 1 Tbsp canola oil
  • 1½ tsps ground cumin
  • 1½ tsps smoked paprika (or use regular paprika)
  • ¾ tsp ground cinnamon
  • ¾ cup barbecue sauce
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • 1½ tsps Worcestershire sauce
  • 2 whole-wheat hamburger buns

Instructions

  1. Coat a 3- or 4-quart slow cooker with cooking spray. Place onions in slow cooker; arrange chicken on top of onions, overlapping slightly.
  2. Drizzle oil over chicken, and sprinkle with cumin, paprika and cinnamon. Cover and cook on LOW 8 hours.
  3. Shred chicken using 2 forks. Stir together barbecue sauce, vinegar, mustard, and Worcestershire sauce in a bowl. Add barbecue sauce mixture to chicken in slow cooker, stirring well.
  4. Cover and cook on HIGH 30 minutes longer.
  5. Divide chicken mixture into 6 portions.
  6. Serve 2 portions of chicken on buns; freeze or refrigerate remaining 4 portions of chicken for another use.

  • 2 cups angel hair coleslaw
  • 2 tsp canola oil
  • 2 tsp apple cider vinegar
  • 1 tsp sugar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
