Sweet & Smoky Barbecue Chicken Sandwiches
Tangy Coleslaw
Ingredients
- 1½ cups diced red onion
- 1½ lb boneless skinless chicken breasts
- 1 Tbsp canola oil
- 1½ tsps ground cumin
- 1½ tsps smoked paprika (or use regular paprika)
- ¾ tsp ground cinnamon
- ¾ cup barbecue sauce
- 1 Tbsp balsamic vinegar
- 1 Tbsp Dijon mustard
- 1½ tsps Worcestershire sauce
- 2 whole-wheat hamburger buns
Instructions
- Coat a 3- or 4-quart slow cooker with cooking spray. Place onions in slow cooker; arrange chicken on top of onions, overlapping slightly.
- Drizzle oil over chicken, and sprinkle with cumin, paprika and cinnamon. Cover and cook on LOW 8 hours.
- Shred chicken using 2 forks. Stir together barbecue sauce, vinegar, mustard, and Worcestershire sauce in a bowl. Add barbecue sauce mixture to chicken in slow cooker, stirring well.
- Cover and cook on HIGH 30 minutes longer.
- Divide chicken mixture into 6 portions.
- Serve 2 portions of chicken on buns; freeze or refrigerate remaining 4 portions of chicken for another use.

- 2 cups angel hair coleslaw
- 2 tsp canola oil
- 2 tsp apple cider vinegar
- 1 tsp sugar
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a bowl.
