Spiced Pork Chops

Ingredients

  • 6 (4-oz) boneless center cut loin pork chops
  • 2 Tbsp olive oil (or use cooking spray)
  • 1 tsp ground allspice
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Rub pork with oil; sprinkle with allspice, cumin, salt, and pepper.
  2. Cook pork in a nonstick skillet over medium heat 4 to 6 minutes per side or until done.

  • 1 lb head broccoli
  • 2 Tbsp butter
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 3 Tbsp canola oil
  • 2 Tbsp balsamic vinegar
  • 6 cups spring mix
  • 2 pears, sliced
  • ½ cup slivered almonds
  • 1 cup sweetened dried cranberries

Side Dish Instructions

  1. Cut broccoli into spears. Steam broccoli in a steamer basket over boiling water 4 to 5 minutes or until crisp-tender. Toss with butter and ½ tsp each salt and pepper.
  2. Whisk together oil, vinegar, and ½ tsp each salt and pepper in a bowl. Add lettuce, pears, nuts, and cranberries; toss.
