Ingredients

  • 6 (6-oz) boneless pork loin chops 
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp grainy Dijon mustard
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 1 clove garlic, minced

Instructions

  1. Preheat broiler. Sprinkle pork with salt and pepper; place on a broiler pan.
  2. Stir together mustard and remaining ingredients in a bowl; rub over pork.
  3. Broil pork 4 minutes per side or until done.

  • ¼ cup extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (16-oz) pkg shaved Brussels sprouts
  • 2 small Honeycrisp apples, thinly sliced
  • ¼ cup unsweetened dried cranberries

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, salt, and pepper in a large bowl. Add remaining ingredients; toss.
