Iced Sugar Cookies
Meringue Powder IcingIngredients
- 1 cup butter, softened
- 1¼ cups granulated sugar
- 1 Tbsp vanilla extract
- 2 large eggs
- 3¼ cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- ½ tsp baking soda
- Assorted candy sprinkles
- Sanding sugar
Instructions
- Beat butter, sugar, and vanilla in a large bowl at medium speed with an electric mixer until fluffy. Add eggs, 1 at a time, beating well after each addition.
- Stir together flour, salt, baking powder, and baking soda in a bowl. Gradually add to butter mixture, beating until blended. Shape dough into 2 discs; wrap in plastic wrap, and chill 2 hours or up to 3 days.
- Preheat oven to 350°F; line baking sheets with parchment paper. Roll out dough to ¼-inch thickness on a lightly floured surface. Cut with desired cutters, and place on prepared baking sheets.
- Bake 10 to 12 minutes or until edges are lightly browned. Cool on baking sheets 2 minutes. Transfer to wire racks, and cool completely.
- Decorate cookies as desired with Meringue Powder Icing recipe, sprinkles, and sanding sugar. Let icing dry completely before storing cookies in airtight containers.
Side Dish Ingredients
- ¼ cup cold water
- 3 Tbsp meringue powder
- 2 cups powdered sugar
- Assorted paste food coloring
Side Dish Instructions
- Whisk together water and meringue powder in a bowl until frothy. Whisk in sugar until smooth. Divide among small bowls, and tint with food coloring as desired.
