Iced Sugar Cookies

Ingredients

  • 1 cup butter, softened
  • 1¼ cups granulated sugar
  • 1 Tbsp vanilla extract
  • 2 large eggs
  • 3¼ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Assorted candy sprinkles
  • Sanding sugar

Instructions

  1. Beat butter, sugar, and vanilla in a large bowl at medium speed with an electric mixer until fluffy. Add eggs, 1 at a time, beating well after each addition.
  2. Stir together flour, salt, baking powder, and baking soda in a bowl. Gradually add to butter mixture, beating until blended. Shape dough into 2 discs; wrap in plastic wrap, and chill 2 hours or up to 3 days.
  3. Preheat oven to 350°F; line baking sheets with parchment paper. Roll out dough to ¼-inch thickness on a lightly floured surface. Cut with desired cutters, and place on prepared baking sheets.
  4. Bake 10 to 12 minutes or until edges are lightly browned. Cool on baking sheets 2 minutes. Transfer to wire racks, and cool completely.
  5. Decorate cookies as desired with Meringue Powder Icing recipe, sprinkles, and sanding sugar. Let icing dry completely before storing cookies in airtight containers.

Side Dish Ingredients

  • ¼ cup cold water
  • 3 Tbsp meringue powder 
  • 2 cups powdered sugar 
  • Assorted paste food coloring

Side Dish Instructions

  1. Whisk together water and meringue powder in a bowl until frothy. Whisk in sugar until smooth. Divide among small bowls, and tint with food coloring as desired.
