Ingredients

  • 1 Tbsp olive oil
  • ¾ tsp Italian seasoning
  • ⅛ tsp pepper
  • 3 (6-oz) flounder fillets (or use snapper or cod)
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat broiler. Combine oil, seasoning, and pepper in a small bowl. Place fish on a foil-lined baking sheet; rub seasoning mixture over fish.
  2. Broil 4 minutes per side or until fish flakes easily with a fork. Sprinkle with cheese.

  • ¾ lb green beans, trimmed
  • ½ (7-oz) jar roasted red bell peppers, drained and sliced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Steam green beans in a steamer basket over boiling water 6 minutes or until tender.
  2. Place green beans and pepper strips in a bowl. Sprinkle with oil, salt, and pepper; toss.
