Broiled Mediterranean Flounder
Green Beans with Roasted Red Peppers
Ingredients
- 1 Tbsp olive oil
- ¾ tsp Italian seasoning
- ⅛ tsp pepper
- 3 (6-oz) flounder fillets (or use snapper or cod)
- ½ cup crumbled feta cheese
Instructions
- Preheat broiler. Combine oil, seasoning, and pepper in a small bowl. Place fish on a foil-lined baking sheet; rub seasoning mixture over fish.
- Broil 4 minutes per side or until fish flakes easily with a fork. Sprinkle with cheese.

- ¾ lb green beans, trimmed
- ½ (7-oz) jar roasted red bell peppers, drained and sliced
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Steam green beans in a steamer basket over boiling water 6 minutes or until tender.
- Place green beans and pepper strips in a bowl. Sprinkle with oil, salt, and pepper; toss.
