Pork Chops with Herb-Mustard Butter

Ingredients
- 2 (1½-inch) thick boneless pork chops
- 1 Tbsp olive oil
- 2 Tbsp butter, softened
- 1 Tbsp chopped fresh parsley
- 1 tsp Dijon mustard
Instructions
- Preheat oven to 400°F. Season pork chops lightly with salt and pepper. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes or until browned on each side.
- Stir together butter, parsley, and mustard. Spread butter mixture over pork chops. Transfer skillet to oven.
- Bake 10 minutes or until pork chops are done.

- ½ (24-oz) pkg frozen roasted garlic homestyle potato wedges
- ½ (16-oz) pkg frozen peas

- Bake potatoes according to package directions.
