Sun-Dried Tomato and Hummus Pasta

Ingredients

  • 6 oz gluten-free spaghetti
  • 1 (15-oz) can chickpeas, drained and rinsed
  • ½ cup sun-dried tomatoes in oil
  • ½ tsp Italian seasoning
  • 1½ tsp olive oil
  • ⅓ cup plain hummus
  • 2 Tbsp chopped fresh basil (optional)

Instructions

  1. Cook pasta according to package directions. Drain, reserving ½ cup pasta water.
  2. Meanwhile, cook chickpeas, tomatoes, and Italian seasoning in hot oil in a large skillet over medium-high heat 6 minutes or until chickpeas are lightly browned.
  3. Add hummus and ¼ cup pasta water, adding more pasta water as needed to reach desired sauce consistency. Serve chickpea mixture over pasta. Sprinkle with basil, if desired.

Side Dish Ingredients

  • 1 (5-oz) pkg mixed greens
  • 1 tangerine (or clementine), peeled and sectioned
  • ¼ cup chopped walnuts
  • 3 Tbsp refrigerated lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
