Sun-Dried Tomato and Hummus Pasta
Citrus and Greens Salad
Ingredients
- 6 oz gluten-free spaghetti
- 1 (15-oz) can chickpeas, drained and rinsed
- ½ cup sun-dried tomatoes in oil
- ½ tsp Italian seasoning
- 1½ tsp olive oil
- ⅓ cup plain hummus
- 2 Tbsp chopped fresh basil (optional)
Instructions
- Cook pasta according to package directions. Drain, reserving ½ cup pasta water.
- Meanwhile, cook chickpeas, tomatoes, and Italian seasoning in hot oil in a large skillet over medium-high heat 6 minutes or until chickpeas are lightly browned.
- Add hummus and ¼ cup pasta water, adding more pasta water as needed to reach desired sauce consistency. Serve chickpea mixture over pasta. Sprinkle with basil, if desired.
Side Dish Ingredients
- 1 (5-oz) pkg mixed greens
- 1 tangerine (or clementine), peeled and sectioned
- ¼ cup chopped walnuts
- 3 Tbsp refrigerated lemon vinaigrette

- Toss together all ingredients in a bowl.
