Sausage Gumbo

Ingredients
- 1 (12-oz) pkg Cajun-style andouille sausage, sliced
- 3 Tbsp gluten-free all-purpose flour
- 2 Tbsp olive oil
- 1 bell pepper (any color), chopped
- ½ onion, chopped
- 1 clove garlic, minced
- 1 tsp dried oregano
- ½ tsp pepper
- ¼ tsp salt
- 2 cups water
- ½ (10-oz) pkg frozen cut okra
Instructions
- Brown sausage in a Dutch oven over medium heat. Remove sausage from pan; keep warm.
- Cook flour and oil in same pot over medium heat, stirring, 5 minutes or until golden.
- Add bell pepper, onion, garlic, oregano, pepper, and salt; sauté 10 minutes or until vegetables are tender. Add water, okra, and sausage. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
- Serve over brown rice.
