Sausage Gumbo

Ingredients

  • 1 (12-oz) pkg Cajun-style andouille sausage, sliced
  • 3 Tbsp gluten-free all-purpose flour
  • 2 Tbsp olive oil
  • 1 bell pepper (any color), chopped
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • ½ tsp pepper
  • ¼ tsp salt
  • 2 cups water
  • ½ (10-oz) pkg frozen cut okra

Instructions

  1. Brown sausage in a Dutch oven over medium heat. Remove sausage from pan; keep warm.
  2. Cook flour and oil in same pot over medium heat, stirring, 5 minutes or until golden.
  3. Add bell pepper, onion, garlic, oregano, pepper, and salt; sauté 10 minutes or until vegetables are tender. Add water, okra, and sausage. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
  4. Serve over brown rice.

  • ¾ cup brown rice

  1. Prepare rice according to package directions; season with salt and pepper to taste.
