Roasted Vegetable Pasta
Cinnamon Orange Slices
Ingredients
- ½ lb butternut squash, peeled and cut into 1-inch pieces
- ½ lb carrots, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 5 cloves garlic
- 2 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup broccoli florets
- 1 tsp dry rubbed sage
- ½ (16-oz) pkg whole wheat shell pasta
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Combine squash, carrots, onion, garlic, oil, salt, and pepper in a greased roasting pan.
- Bake 30 minutes, stirring once. Add broccoli and sage; bake 10 minutes longer or until vegetables are tender.
- Cook pasta according to package directions; drain, reserving 1 cup pasta water.
- Toss together pasta, roasted vegetables, cheese, and desired amount of pasta water; serve immediately.

- 2 oranges, peeled and sliced
- 1 tsp ground cinnamon
Side Dish Instructions
- Arrange orange slices on a plate; sprinkle with cinnamon.
