Potsticker Noodle Bowl
Ingredients
- ½ (14-oz) pkg rice linguine noodles (or use regular rice noodles or linguine)
- ¾ lb lean ground beef (or use ground chicken)
- ½ (16-oz) pkg shredded coleslaw
- 1 large egg, lightly beaten
- 3 Tbsp low-sodium chicken broth
- 3 Tbsp low-sodium soy sauce
- 1 Tbsp garlic paste
- 1½ tsp rice vinegar
- 1 green onion, thinly sliced
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook beef in a large skillet coated with cooking spray over medium-high heat 6 minutes or until browned. Add coleslaw; cook 5 minutes or until coleslaw is tender.
- Push beef mixture to side of skillet. Pour eggs into center, and cook, stirring occasionally, until eggs are set.
- Add broth, soy sauce, garlic, and vinegar to skillet; cook 2 minutes or until thoroughly heated. Sprinkle with onion. Serve over noodles.
