Ingredients

  • ½ (14-oz) pkg rice linguine noodles (or use regular rice noodles or linguine)
  • ¾ lb lean ground beef (or use ground chicken)
  • ½ (16-oz) pkg shredded coleslaw
  • 1 large egg, lightly beaten
  • 3 Tbsp low-sodium chicken broth
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp garlic paste
  • 1½ tsp rice vinegar
  • 1 green onion, thinly sliced

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook beef in a large skillet coated with cooking spray over medium-high heat 6 minutes or until browned. Add coleslaw; cook 5 minutes or until coleslaw is tender.
  3. Push beef mixture to side of skillet. Pour eggs into center, and cook, stirring occasionally, until eggs are set.
  4. Add broth, soy sauce, garlic, and vinegar to skillet; cook 2 minutes or until thoroughly heated. Sprinkle with onion. Serve over noodles.
