Turkey-Avocado Club Sandwiches

Ingredients

  • 1 avocado, mashed
  • 1 tsp lemon juice
  • 8 (1-oz) slices whole-grain bread, toasted
  • ½ lb deli-sliced low-sodium turkey breast
  • 8 slices center cut bacon, cooked
  • 1 tomato, sliced
  • 4 green leaf lettuce leaves (optional)

Instructions

  1. Stir together avocado and lemon juice. Spread avocado over one side of 4 bread slices; layer with turkey, bacon, tomato, lettuce leaves (if using), and remaining bread slices. Cut sandwiches in half diagonally to serve.

  • ½ (16-oz) pkg tricolor coleslaw
  • 3 green onions, sliced
  • 1 large navel orange, peeled and coarsely chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • ¼ tsp salt

Side Dish Instructions

  1. Combine slaw, onions, and orange in a serving bowl. Whisk together oil, honey, lemon zest, lemon juice, and salt. Drizzle dressing over slaw; toss.
