Ingredients

- 1 (15-oz) can chickpeas (or use cannellini beans), drained and rinsed
- ½ cup drained thinly sliced sun-dried tomatoes in oil
- 1 cup freshly grated Parmesan cheese
- ½ cup light balsamic vinaigrette
Instructions
- Divide salad mix among 4 plates; top each serving with chickpeas, tomatoes, and cheese. Drizzle with vinaigrette.
