Crunchy Breaded Fish Sticks "Po Boy" Sliders with Pesto Remoulade

Ingredients

  • 1 (19-oz) pkg frozen breaded fish sticks
  • 2 (6-count) pkg Hawaiian sweet mini sub rolls, halved
  • 1 cup mayonnaise
  • ⅓ cup pesto
  • 1 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 1 Tbsp capers, minced 
  • 1 (8-oz) pkg shredded lettuce
  • 4 Roma tomatoes, sliced

Instructions

  1. Cook fish stick according to package directions. Toast sub rolls, if desired.
  2. Stir together mayonnaise, pesto, lemon juice, and capers. Spread on cut sides of rolls.
  3. Serve fish sticks on toasted rolls with lettuce and tomato.
