Crispy Battered Whole Fillets with Red Pepper Aioli

Ingredients

  • 1 red bell pepper, halved and seeded
  • 1 (10-oz) pkg frozen battered fish fillets
  • ⅓ cup mayonnaise
  • 1 Tbsp lemon juice
  • ¼ tsp ground red pepper
  • 1 clove garlic, minced
  • ¼ tsp salt
  • 2 lemons, cut into wedges

Instructions

  1. Preheat broiler. Place pepper, cut sides down on a foil-lined baking sheet, Broil pepper 8 minutes or until blistered. Place blackened pepper in a zip-top plastic bag. Seal bag, and let stand 10 minutes.
  2. Meanwhile, cook fish according to package directions.
  3. Remove pepper from bag; peel off and discard blackened skin. Process roasted pepper, mayonnaise, lemon juice, red pepper, garlic, and salt in a mini chopper until smooth.
  4. Serve fish with red pepper aioli and lemon wedges.
