Hot and Sour Soup

Ingredients

  • 3 (3.5-oz) pkg shiitake mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 Tbsp sesame oil
  • 2 (32-oz) cartons chicken broth
  • 1 (14-oz) pkg extra-firm tofu, drained and cut into matchsticks
  • 1 (8-oz) can bamboo shoots, drained and cut into matchsticks
  • 3 Tbsp rice vinegar
  • 2 Tbsp soy sauce
  • 1 Tbsp refrigerated ginger paste (from a 4-oz tube)
  • 1 Tbsp Sriracha hot sauce
  • 1 large egg, lightly beaten
  • 4 green onions, thinly sliced

Instructions

  1. Cook mushrooms and garlic in hot oil in a large Dutch oven over medium-high heat 5 minutes.
  2. Add broth and all remaining ingredients, except egg and green onion; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Add beaten egg in a slow steady stream, stirring constantly. Cook 2 minutes. Stir in green onions.
