Hot and Sour Soup

Ingredients
- 3 (3.5-oz) pkg shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 2 Tbsp sesame oil
- 2 (32-oz) cartons chicken broth
- 1 (14-oz) pkg extra-firm tofu, drained and cut into matchsticks
- 1 (8-oz) can bamboo shoots, drained and cut into matchsticks
- 3 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 1 Tbsp refrigerated ginger paste (from a 4-oz tube)
- 1 Tbsp Sriracha hot sauce
- 1 large egg, lightly beaten
- 4 green onions, thinly sliced
Instructions
- Cook mushrooms and garlic in hot oil in a large Dutch oven over medium-high heat 5 minutes.
- Add broth and all remaining ingredients, except egg and green onion; bring to a boil, reduce heat, and simmer 10 minutes.
- Add beaten egg in a slow steady stream, stirring constantly. Cook 2 minutes. Stir in green onions.
