Bacon Cheeseburger Chopped Salad

Ingredients

  • ¾ lb 93% lean ground beef
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 4 slices center cut bacon
  • 8 cups torn green leaf lettuce
  • ½ cup chopped red onion
  • 2 Tbsp shredded 2% reduced-fat sharp Cheddar cheese
  • 2 Roma tomatoes, chopped
  • 1 avocado, chopped
  • ⅓ cup balsamic vinegar
  • 2 Tbsp Dijon mustard

Instructions

  1. Mix beef, salt, and pepper; shape into 4 large thin patties.
  2. Cook patties over medium heat in a nonstick skillet 5 minutes per side or until no longer pink; cool and coarsely crumble patties.
  3. Cook bacon in same skillet until crisp; drain and crumble bacon.
  4. Combine lettuce, crumbled burger, bacon, onion, cheese, tomatoes, and avocado; toss.
  5. Whisk together vinegar and mustard; drizzle over salad.
