Pepperoni Tortilla Pizzas
Mixed Green SaladIngredients
- 3 large low-carb whole-wheat flour tortillas
- ½ (8-oz) can tomato sauce
- 1 cup sliced mushrooms
- 1½ tsp dried oregano
- ¾ cup shredded part-skim mozzarella cheese
- 20 slices turkey pepperoni (about ¼ [5-oz] pkg)
Instructions
- Preheat oven to 400°F. Coat both sides of tortillas with cooking spray, and place on a large baking sheet.
- Bake 3 to 4 minutes or until lightly browned. Remove from oven, and turn tortillas. Spoon about 2 Tbsp sauce over each tortilla. Top with mushrooms, oregano, cheese, and pepperoni.
- Bake 4 to 5 minutes longer or until cheese melts. Let stand 2 minutes; cut into wedges.
Side Dish Ingredients
- 1 (5-oz) pkg mixed greens
- 2½ Tbsp balsamic vinaigrette
Side Dish Instructions
- Toss together greens and vinaigrette in a bowl.
