Pepperoni Tortilla Pizzas

Ingredients

  • 3 large low-carb whole-wheat flour tortillas
  • ½ (8-oz) can tomato sauce
  • 1 cup sliced mushrooms
  • 1½ tsp dried oregano
  • ¾ cup shredded part-skim mozzarella cheese
  • 20 slices turkey pepperoni (about ¼ [5-oz] pkg)

Instructions

  1. Preheat oven to 400°F. Coat both sides of tortillas with cooking spray, and place on a large baking sheet.
  2. Bake 3 to 4 minutes or until lightly browned. Remove from oven, and turn tortillas. Spoon about 2 Tbsp sauce over each tortilla. Top with mushrooms, oregano, cheese, and pepperoni.
  3. Bake 4 to 5 minutes longer or until cheese melts. Let stand 2 minutes; cut into wedges.

Side Dish Ingredients

  • 1 (5-oz) pkg mixed greens
  • 2½ Tbsp balsamic vinaigrette

Side Dish Instructions

  1.  Toss together greens and vinaigrette in a bowl.
