Turkey Taco Lettuce Wraps

Ingredients
- ½ onion, chopped
- ½ red bell pepper, chopped
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 lb lean ground turkey
- 1 Tbsp chili powder
- ½ tsp ground coriander
- ¼ tsp salt
- ¼ tsp pepper
- ½ (14.5-oz) can diced tomatoes, drained
- 2 Tbsp chopped fresh cilantro
- 6 romaine lettuce leaves
- 2 small radishes, thinly sliced
- 1 (8-oz) container guacamole
Instructions
- Sauté onion, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 6 minutes or until tender.
- Add turkey, chili powder, coriander, salt, and pepper. Cook 5 minutes or until done.
- Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.
- For each taco, stack 2 leaves on a work surface; fill with turkey mixture, radishes, and guacamole.
