Stuffed Cabbage Rolls
Kale, Apple, and Pecan Salad
Ingredients
- 6 large cabbage leaves
- 1 lb ground sirloin (or use ground pork or chicken)
- 1½ Tbsp olive oil, divided
- 1 small onion, chopped
- 2 small cloves garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- ½ (14.5-oz) can fire-roasted diced tomatoes, drained (or use regular diced tomatoes)
- 1 Tbsp chopped fresh parsley
- ¾ cup pizza sauce
Instructions
- Preheat oven to 350°F. Arrange cabbage in a steamer basket over boiling water. Cover and steam 2 minutes or until tender.
- Meanwhile, cook beef in ½ Tbsp hot oil in a large skillet 5 minutes or until no longer pink; drain.
- Add 1 Tbsp oil, onion, garlic, salt, and pepper to skillet; cook 4 minutes. Add tomatoes, and cook 4 minutes or until onions are tender. Return beef to skillet; stir in parsley.
- Spoon mixture down center of each cabbage leaf. Roll up filled leaves; place, seam sides down, in a lightly greased 9-inch baking dish.
- Pour pizza sauce over cabbage rolls. Bake 30 minutes or until hot and bubbly.
Side Dish Ingredients
- ½ (5-oz) pkg baby kale
- ½ cup chopped pecans
- ½ Honeycrisp apple, thinly sliced
- 1 Tbsp lemon juice
- 1 tsp sugar
- 1½ Tbsp olive oil
- Dash of salt
- Dash of pepper
Side Dish Instructions
- Toss together kale and nuts in a bowl. Toss apple with lemon juice and sugar; add to salad.
- Toss salad with oil; sprinkle with salt and pepper.
