Stuffed Cabbage Rolls

Kale, Apple, and Pecan Salad

Ingredients

  • 6 large cabbage leaves
  • 1 lb ground sirloin (or use ground pork or chicken)
  • 1½ Tbsp olive oil, divided
  • 1 small onion, chopped
  • 2 small cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (14.5-oz) can fire-roasted diced tomatoes, drained (or use regular diced tomatoes)
  • 1 Tbsp chopped fresh parsley
  • ¾ cup pizza sauce

Instructions

  1. Preheat oven to 350°F. Arrange cabbage in a steamer basket over boiling water. Cover and steam 2 minutes or until tender.
  2. Meanwhile, cook beef in ½ Tbsp hot oil in a large skillet 5 minutes or until no longer pink; drain.
  3. Add 1 Tbsp oil, onion, garlic, salt, and pepper to skillet; cook 4 minutes. Add tomatoes, and cook 4 minutes or until onions are tender. Return beef to skillet; stir in parsley.
  4. Spoon mixture down center of each cabbage leaf. Roll up filled leaves; place, seam sides down, in a lightly greased 9-inch baking dish.
  5. Pour pizza sauce over cabbage rolls. Bake 30 minutes or until hot and bubbly.

Side Dish Ingredients

  • ½ (5-oz) pkg baby kale
  • ½ cup chopped pecans
  • ½ Honeycrisp apple, thinly sliced
  • 1 Tbsp lemon juice
  • 1 tsp sugar
  • 1½ Tbsp olive oil
  • Dash of salt
  • Dash of pepper

Side Dish Instructions

  1. Toss together kale and nuts in a bowl. Toss apple with lemon juice and sugar; add to salad.
  2. Toss salad with oil; sprinkle with salt and pepper.
