Brown Sugar-Baked Chicken
Parmesan-Herb Roasted Potatoes and Steamed Green BeansIngredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ½ cup packed brown sugar
- ¼ cup butter, melted
- 3 Tbsp ketchup
- 2 Tbsp Dijon mustard
- 1 Tbsp Worcestershire sauce
Instructions
- Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Cook chicken in hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
- Stir together brown sugar and remaining ingredients; pour over chicken. Transfer skillet to oven, and bake 15 minutes or until chicken is done.

- 2 lb small red potatoes, quartered
- ¼ cup olive oil
- ⅓ cup grated Parmesan cheese
- 1½ tsp Italian seasoning
- 2 (12-oz) pkg frozen green beans
Side Dish Instructions
- Preheat oven to 400°F. Toss potatoes with oil, cheese, and seasoning on a lightly greased rimmed baking sheet. Spread in a single layer, and season lightly with salt and pepper.
- Bake 25 to 30 minutes or until browned and tender.
- Cook green beans according to package directions. Season with salt and pepper to taste.
