Ingredients

  • 1 (16-oz) pkg linguine
  • 1 lb boneless, skinless chicken breasts
  • 1 (14-oz) pkg smoked sausage, sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 Tbsp olive oil
  • 1 Tbsp Creole seasoning
  • 2 Tbsp tomato paste
  • 1 cup chicken broth
  • 1 (14.5-oz) can diced tomatoes

Instructions

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, cut chicken into 1-inch pieces. Cook chicken, sausage, bell pepper, and onion in hot oil in a large skillet over medium-high heat until browned. Sprinkle with Creole seasoning.
  3. Stir in tomato paste; cook, stirring constantly, 2 minutes. Stir in broth and tomatoes; bring to a boil, reduce heat, and simmer 10 minutes.
  4. Serve chicken mixture over pasta.

  • 1 (12-oz) pkg chopped salad greens
  • 2 Roma tomatoes, chopped
  • 2 carrots, thinly sliced
  • ½ cup balsamic dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
