Jambalaya Pasta
Tossed Green SaladIngredients
- 1 (16-oz) pkg linguine
- 1 lb boneless, skinless chicken breasts
- 1 (14-oz) pkg smoked sausage, sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 2 Tbsp olive oil
- 1 Tbsp Creole seasoning
- 2 Tbsp tomato paste
- 1 cup chicken broth
- 1 (14.5-oz) can diced tomatoes
Instructions
- Cook pasta according to package directions; drain and keep warm.
- Meanwhile, cut chicken into 1-inch pieces. Cook chicken, sausage, bell pepper, and onion in hot oil in a large skillet over medium-high heat until browned. Sprinkle with Creole seasoning.
- Stir in tomato paste; cook, stirring constantly, 2 minutes. Stir in broth and tomatoes; bring to a boil, reduce heat, and simmer 10 minutes.
- Serve chicken mixture over pasta.

- 1 (12-oz) pkg chopped salad greens
- 2 Roma tomatoes, chopped
- 2 carrots, thinly sliced
- ½ cup balsamic dressing
