Easy Chicken-Avocado Soup

Ingredients
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 1 tomato, chopped
- 4 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp ground chipotle chile pepper
- 3 cups shredded rotisserie chicken
- 2 avocados, chopped or sliced
- ½ cup chopped fresh cilantro
- 1 cup shredded Cheddar cheese
- 1 lime, halved
Instructions
- Cook garlic in hot oil in a large Dutch oven 2 minutes. Add tomato, broth, cumin, and chile pepper; bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes; stir in chicken.
- Ladle soup into 4 bowls, and top each with avocado, cilantro, cheese, and a squeeze of lime.
