Easy Chicken-Avocado Soup

Ingredients

  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 tomato, chopped
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground chipotle chile pepper
  • 3 cups shredded rotisserie chicken
  • 2 avocados, chopped or sliced
  • ½ cup chopped fresh cilantro
  • 1 cup shredded Cheddar cheese
  • 1 lime, halved

Instructions

  1. Cook garlic in hot oil in a large Dutch oven 2 minutes. Add tomato, broth, cumin, and chile pepper; bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes; stir in chicken.
  2. Ladle soup into 4 bowls, and top each with avocado, cilantro, cheese, and a squeeze of lime.
