Fish "Tacos" with Spicy Mayonnaise

Ingredients

  • ½ cup mayonnaise 
  • 1 Tbsp lime juice
  • 1 tsp ground chipotle chile pepper
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cloves garlic, minced
  • 1½ lb mahi mahi
  • 3 Tbsp olive oil, divided
  • 8 large Napa cabbage leaves

Instructions

  1. Combine mayonnaise, lime juice, and ground chipotle pepper in a bowl; set aside until ready to serve.
  2. Combine cumin, salt, pepper, and garlic; rub all over fish.
  3. Cook fish, in 2 batches, in 1½ Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 minutes per side or until fish flakes with a fork.
  4. Break fish into chunks with a fork. Spoon fish into cabbage leaves; drizzle with mayonnaise. Top with Tomato-Avocado Salsa recipe, if desired.

Side Dish Ingredients

  • 1 tomato, diced
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • ¼ tsp salt
  • 1⅓ cups diced avocado

Side Dish Instructions

  1. Toss together tomato, cilantro, lime juice, and salt in a bowl. Add avocado just before serving.
