Oven-Roasted Meatballs

Ingredients

  • 2 lb grass-fed ground beef
  • ½ onion, chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1½ tsp garlic salt
  • 1 tsp pepper
  • 1 large egg, lightly beaten
  • 1 cup chopped fresh parsley
  • 3 Tbsp extra virgin olive oil
  • 2 tsp lemon zest
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with foil; set a wire rack over foil.
  2. Combine beef, onion, oregano, thyme, garlic salt, pepper, and egg; shape into 2-inch balls. Place on wire rack.
  3. Bake 20 to 25 minutes or until meatballs are done.
  4. Stir together parsley, oil, zest, and garlic in a small bowl; season with salt and pepper to taste. Sprinkle over meatballs.

Side Dish Ingredients

  • 2½ lb sweet potatoes, peeled, halved, and cut into ¼-inch-thick slices
  • 2 Tbsp coconut oil, melted (or use avocado oil)
  • 1½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes and oil on a large rimmed baking sheet; arrange in a single layer.
  2. Stir together paprika and remaining ingredients; sprinkle over potatoes.
  3. Bake 30 minutes or until potatoes are browned and tender.
