Oven-Roasted Meatballs
Smoky Roasted Sweet PotatoesIngredients
- 2 lb grass-fed ground beef
- ½ onion, chopped
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1½ tsp garlic salt
- 1 tsp pepper
- 1 large egg, lightly beaten
- 1 cup chopped fresh parsley
- 3 Tbsp extra virgin olive oil
- 2 tsp lemon zest
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F. Line a rimmed baking sheet with foil; set a wire rack over foil.
- Combine beef, onion, oregano, thyme, garlic salt, pepper, and egg; shape into 2-inch balls. Place on wire rack.
- Bake 20 to 25 minutes or until meatballs are done.
- Stir together parsley, oil, zest, and garlic in a small bowl; season with salt and pepper to taste. Sprinkle over meatballs.
Side Dish Ingredients
- 2½ lb sweet potatoes, peeled, halved, and cut into ¼-inch-thick slices
- 2 Tbsp coconut oil, melted (or use avocado oil)
- 1½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
Side Dish Instructions
- Preheat oven to 400°F. Toss together potatoes and oil on a large rimmed baking sheet; arrange in a single layer.
- Stir together paprika and remaining ingredients; sprinkle over potatoes.
- Bake 30 minutes or until potatoes are browned and tender.
