Broiled Lemon-Pepper Flank Steak

Ingredients

  • 2 Tbsp coconut oil, melted (or use avocado oil)
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp lemon-pepper seasoning
  • 2 tsp garlic salt
  • 2 lb flank steak, trimmed (or use skirt steak)

Instructions

  1. Preheat broiler. Combine oil, lemon juice, seasoning, and garlic salt in a small bowl. Rub over steak on a lightly greased broiler pan.
  2. Broil 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain. Serve over Spinach, Celery, and Apple Salad recipe.

Side Dish Ingredients

  • 3 Tbsp orange juice
  • 3 Tbsp extra virgin olive oil
  • 2 tsp honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (10-oz) pkg baby spinach
  • 6 stalks celery, thinly sliced
  • 2 red apples, thinly sliced

Side Dish Instructions

  1. Whisk together orange juice, oil, honey, salt, and pepper in a large bowl. Add spinach, celery, and apples; toss. Season with salt and pepper to taste.
