Chili Sweet Potato Fries

Ingredients

  • ¾ lb ground round
  • 1 carrot, shredded
  • 1 organic bell pepper, chopped (any color)
  • ⅓ cup chopped onion
  • ½ (6-oz) can BPA-free organic tomato paste
  • ¼ cup low-sodium chicken broth
  • ½ tsp apple cider vinegar
  • 1 tsp salt-free seasoning blend
  • ½ tsp dry mustard 
  • 1 small head Bibb lettuce, leaves separated

Instructions

  1. Cook beef, carrot, bell pepper, and onion in a large nonstick skillet over medium heat 6 minutes or until beef is browned and crumbly; drain. Remove from skillet.
  2. Add tomato paste, broth, vinegar, steak seasoning, and mustard to skillet. Return beef to skillet; cook 8 minutes or until sauce is thickened. Spoon beef mixture onto lettuce leaves, and serve as wraps.

Side Dish Ingredients

  • 2 organic sweet potatoes, cut into wedges
  • 1 Tbsp olive oil
  • ½ tsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine all ingredients on a rimmed baking sheet. Bake 20 to 25 minutes, turning once, or until potatoes are browned and tender.
