Buffalo Shrimp over Gouda "Grits"

Ingredients

  • 3 (12-oz) pkg frozen riced cauliflower 
  • 4 oz Gouda cheese, shredded
  • 3 Tbsp butter 
  • ½ tsp salt
  • ½ tsp pepper
  • 2 lb peeled and deveined, large raw shrimp
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • ½ cup buffalo sauce (see Note)
  • 2 green onions, thinly sliced

Instructions

  1. Cook cauliflower according to package directions. Stir in cheese, butter, salt, and pepper.
  2. Cook shrimp and garlic in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink.
  3. Reduce heat to medium-low; add buffalo sauce, stirring to coat shrimp. Cook 2 to 3 minutes or until thoroughly heated. Serve shrimp over cheese grits. Sprinkle with onions.

  • 4 Tbsp butter
  • 1 lb green beans, trimmed
  • ½ cup chopped pecans
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Melt butter in a large skillet over medium heat; cook 2 minutes or until butter has a nutty fragrance and is browned. Add green beans; cook 2 minutes.
  2. Add nuts, and cook 3 to 4 minutes or until beans are tender and nuts are toasted. Stir in salt and pepper.
