Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¼ tsp garlic salt
  • ½ cup pimiento cheese
  • 12 slices bacon
  • 2 Tbsp canola oil

Instructions

  1. Preheat oven to 375°F. Cut chicken into 6 pieces. Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Cut a 2-inch slit horizontally into each breast. Stuff pimiento cheese into each pocket. Sprinkle top of chicken with garlic salt.
  3. Wrap each chicken breast with two bacon slices; secure with wooden picks.
  4. Heat oil in large cast-iron or ovenproof skillet over medium heat. Brown chicken rolls 3 minutes, turning often. Place skillet in oven, and bake 15 to 20 minutes or until done.

  2. Toss hot green beans with butter, lemon juice, zest, garlic salt, and pepper in a bowl.
