Honey-Citrus Salmon
Simple Roasted Brussels Sprouts
Ingredients
- 1 orange
- 1 lemon
- 2 Tbsp honey
- 1 Tbsp Dijon mustard
- 2 tsp chopped fresh thyme
- 6 (6-oz) salmon fillets
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Grate zest and squeeze juice from orange and lemon. Bring orange juice, lemon juice, orange zest, lemon zest, and honey to a boil in a small saucepan. Reduce heat, and simmer 10 minutes or until reduced by half. Stir in mustard and thyme.
- Preheat oven to 450°F. Place salmon on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of citrus sauce.
- Bake 10 to 12 minutes or until fish flakes with a fork. Serve with remaining citrus sauce.

- 3 (16-oz) pkg Brussels sprouts, halved
- 3 Tbsp olive oil
- ¾ tsp salt
- ¾ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients over 2 large rimmed baking sheets; spread in a single layer. Bake 20 to 25 minutes or until tender and browned.
