Honey-Citrus Salmon

Simple Roasted Brussels Sprouts

Ingredients

  • 1 orange
  • 1 lemon
  • 2 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 2 tsp chopped fresh thyme
  • 6 (6-oz) salmon fillets
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Grate zest and squeeze juice from orange and lemon. Bring orange juice, lemon juice, orange zest, lemon zest, and honey to a boil in a small saucepan. Reduce heat, and simmer 10 minutes or until reduced by half. Stir in mustard and thyme.
  2. Preheat oven to 450°F. Place salmon on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of citrus sauce.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Serve with remaining citrus sauce.

  • 3 (16-oz) pkg Brussels sprouts, halved
  • 3 Tbsp olive oil
  • ¾ tsp salt
  • ¾ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients over 2 large rimmed baking sheets; spread in a single layer. Bake 20 to 25 minutes or until tender and browned.
