Curry-Glazed Chicken Drumsticks

Ingredients

  • ½ cup honey
  • ¼ cup butter, melted
  • ¼ cup mustard
  • 1 Tbsp curry powder
  • 1 tsp salt
  • 3 lb chicken drumsticks

Instructions

  1. Preheat oven to 375°F. Whisk together honey, melted butter, mustard, curry powder, and salt in a large bowl. Add chicken, and toss.
  2. Pour mixture onto a large foil-lined rimmed baking sheet; spread in a single layer. Bake 55 minutes to 1 hour and 10 minutes or until chicken is done.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 1 Tbsp olive oil
  • 1 (14-oz) can unsweetened coconut milk
  • ⅔ cup water
  • ½ tsp salt
  • 1 (12-oz) pkg frozen green peas

Side Dish Instructions

  1. Cook rice in hot oil in a large saucepan over medium-high heat until lightly browned.
  2. Add coconut milk, water, and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat; fluff with a fork.
  3. Steam peas according to package directions; season with salt and pepper to taste.
