Curry-Glazed Chicken Drumsticks
Coconut Rice and Steamed PeasIngredients
- ½ cup honey
- ¼ cup butter, melted
- ¼ cup mustard
- 1 Tbsp curry powder
- 1 tsp salt
- 3 lb chicken drumsticks
Instructions
- Preheat oven to 375°F. Whisk together honey, melted butter, mustard, curry powder, and salt in a large bowl. Add chicken, and toss.
- Pour mixture onto a large foil-lined rimmed baking sheet; spread in a single layer. Bake 55 minutes to 1 hour and 10 minutes or until chicken is done.

- 1½ cups long-grain white rice
- 1 Tbsp olive oil
- 1 (14-oz) can unsweetened coconut milk
- ⅔ cup water
- ½ tsp salt
- 1 (12-oz) pkg frozen green peas
Side Dish Instructions
- Cook rice in hot oil in a large saucepan over medium-high heat until lightly browned.
- Add coconut milk, water, and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat; fluff with a fork.
- Steam peas according to package directions; season with salt and pepper to taste.
