Broccoli-Cheese Soup
Red Grapes
Ingredients
- ½ cup finely chopped onion
- 1 Tbsp olive oil
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- ½ (12-oz) pkg frozen broccoli florets
- 1½ cups chicken broth
- ½ cup half-and-half (or use whole milk)
- 1 cup shredded sharp Cheddar cheese (see Note)
- ¼ tsp garlic powder
- 3 slices bacon, cooked and crumbled
- ½ (5-oz) pkg cheese croutons
Instructions
- Sauté onion in hot oil in a large saucepan over medium heat, about 3 to 5 minutes. Add butter; cook 1 minute. Add flour. Cook, stirring constantly, 2 minutes.
- Add broccoli, broth, and half-and-half; bring to a boil. Reduce heat, and simmer 3 to 5 minutes. Gradually add cheese and garlic powder, stirring until melted.
- Simmer 3 to 5 minutes or until thickened. Season with salt and pepper to taste. Sprinkle each serving with bacon and desired amount of croutons.
