Christmas Morning Breakfast Casserole

Ingredients

  • ½ (16-oz) pkg Italian ground pork sausage
  • 1 red bell pepper (or any color), chopped
  • 3 green onions, sliced
  • ½ (30-oz) pkg frozen shredded hash browns
  • 1 cup shredded sharp Cheddar cheese
  • 6 large eggs
  • ¾ cup whole milk
  • ½ tsp seasoned salt
  • ½ tsp pepper

Instructions

  1. Cook sausage in a large skillet over medium heat, stirring 8 to 10 minutes or until browned and crumbly; drain well.
  2. Combine bell peppers and onions.
  3. Place half of hash browns in a greased 3- or 4-quart slow cooker; top with half each of sausage, bell pepper mixture, and cheese. Repeat layers.
  4. Whisk together eggs, milk, salt, and pepper. Pour in cooker.
  5. Cover and cook on LOW 6 hours or until eggs are set.

Side Dish Ingredients

  • ½ (23-oz) jar cinnamon applesauce, chilled

Side Dish Instructions

  1. Serve desired amount of applesauce on each plate.
